i love pesto and i love salad. so therefore whenever i have pesto laying around and don’t want to make another pasta dish with it, i will thin it out and serve with a big salad.
2 tablespoons pesto
1 tablespoon red wine vinegar
2-3 tablespoons olive oil
depending on how large your salad is, you may need to adjust the amount of olive oil and vinegar
you may also want to adjust the seasoning by adding more salt and/or pepper
